The quaint Greek village of Tarpon Springs, Florida is a delightful place to enjoy authentic gyros. Tarpon Springs is on the Gulf of Mexico coast near Tampa. My favorite hangout is Dimitri’s, a waterfront restaurant with a great view of the sponge docks. This is no fast food gyro. The thing is plump with fresh grilled lamb and beef, big ripe tomatoes , onions, and homemade tzatziki sauce on fresh baked pita bread. Greek immigrants settled here generations ago to harvest sponges from the rich Gulf waters. Many call Tarpon Springs the “Sponge Capital of the World.” One bite of a delicious gyro here will make you yell, “Opa!”
